Chinese Ground Beef

       中国地面牛肉砂锅

I recently resurrected a recipe that I haven't made in quite some time.  I made quite a large batch so several folks have had a chance to try it for the first time.  Several have asked for the recipe so here it is!

2 1/2 lbs. ground beef
2 TBS. brown sugar
2 TBS. butter
2 C. chicken broth
2 cans cream of mushroom soup
2 C. chopped celery
1 bell pepper- chopped
2 med. onion- chopped
 2 1/2 C. uncooked rice
1 C. slivered almonds
5 TBS. soy sauce (low sodium works fine)
1 small can sliced mushrooms
Salt and Pepper to taste

Saute onions, in butter. Mix all other ingredients in a big bowl.  Add saute'd onions. If mixture seems dry (should be about the consistency of pudding) add more chicken broth or water.
Put mixture in a 9X13 casserole (or a 3qt. casserole)  Bake at 350 for 1 hour or until ground beef is cooked through.
