CHAI TEA
 I've received several notes requesting suggestions for last minute, easy Christmas gifts this week so I thought I'd re-post some previous posts.  This particular recipe makes quite a lot of mix and for those who love Chai Tea it is just as good as that popular coffee house version at a fraction of the price!  Tuck it into a little basket or bag along with a coffee mug or tea cup along with some biscotti or a mini quick bread and a Christmas tea towel.  Wrap it all up with a pretty bow and you've got a GREAT last minute gift that anyone would love to receive! 

Chai Tea Mix

1 cup nonfat dry milk powder
1 cup powdered non-dairy creamer
1 cup French vanilla flavored powdered non-dairy creamer
2 ½ cups white sugar
1 ½ cups unsweetened instant tea
2 tsp ground ginger
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground cardamom
1 tsp nutmeg
1 tsp allspice

Directions:

1. In a large bowl, combine milk powder, non-dairy creamers, sugar, and instant tea. Stir in other spices. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder. Not an absolute necessity but I think it looks better.

2. To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water. I usually finish with a dollop of whipped cream and a sprinkle of cinnamon.


Gingerbread Coffee

3 Cups Coffeemate Powdered Creamer
1 Cup packed dark brown sugar
1 tsp ground ginger
1 tsp. ground cinnamon
1 tsp. ground allspice
1 tsp. ground nutmeg
1 tsp. ground cloves
3/4 Cup instant coffee (the best you can find)

Place all of the ingredients into a food processor and process until a fine powder. Use two heaping teaspoons per 8oz. boiling water.
