Crock Pot Bread Pudding

8 C. cubed day-old unfrosted cinnamon rolls  (You may substitute day old white bread, sour dough bread or cinnamon raisin bread.  If you substitute white bread add 1 tsp. ground cinnamon to the recipe.)
4 eggs
2 C milk
1/4 C sugar
1/4  C. real butter (melted)
1/2 tsp. vanilla extract
1/4 tsp. ground nutmeg
1 C. raisins
Place cubed cinnamon rolls in a 3 qt. crock pot.  In a small bowl, whisk the eggs, milk, sugar, butter, vanilla and nutmeg.  Stir in raisins.  Pour over the cinnamon rolls; stir gently.  Cover an dcook on low for 3 hours or until a knife inserted near the center comes out clean.




Blueberry Cobbler

1 Can (21 oz.) blueberry pie filling
1 pkg. (9 oz.) yellow cake mix
1/4 C. chopped pecans
1/4 C. butter, melted
Vanilla ice cream, optional
Place pie filling in a greased 1-1/2 qt. crock pot
Sprinkle with cake mix and pecans.  Drizzle with butter. Cover and cook on high for 3 hours or until topping  is golden brown. Serve warm with ice cream if desired.




Scalloped Potatoes and Ham

10 med. potatoes peeled and sliced thin
3 cups cubed fully cooked ham
2 large onions, thinly sliced
2 C. shredded cheddar cheese
1 can cream of mushroom soup, undiluted
1/2 tsp. paprika
1/4 tsp. pepper
 In a greased 6 qt. crock pot, layer half of the potatoes, ham, onions and cheese.  Repeat layers.  Pour soup over top.  Sprinkle with paprika and pepper.  Cover and cook on low for 8-10 hours or until potatoes are tender. 



Spicy Turkey Bean Soup

2 cans (15 oz. each) white kidney or cannellini beans, rinsed and drained.
2 C. cubed cooked turkey
1 can (14-1/2 oz.) chicken broth
1 can (10oz) diced tomatoes and green chilies, undrained
1 C. salsa
1/2 tsp. ground cumin
1/4 tsp. curry powder
1/4 tsp. ground ginger
1/4 tsp. paprika

In a 3-4 qt. slow cooker, combine all ingredients.  Cover and cook on low for 5-6 hours or until heated through.


Chalupa Roast

1- 3 or 4 lb. pork loin roast
Chili Powder
1 med. onion chopped
1 can cream of mushroom soup
1 can Rotel tomatoes
1 can chopped green chilies
2 C. soaked pinto beans  (2 cans rinsed pinto beans may be substituted)
1 C. water

Cover roast completely (all sides) with chili powder.  Place all ingredients in crock pot.  Set crock pot to medium and cook for 8-10 hours.

Serve with rice or mashed potatoes.  


Best Ever Baked Beans

This recipe has been a family favorite for almost 30 yrs.  It is a pleasant change from basic baked beans and is great accompaniment for our Texas BBQ's.

2 lb. ground beef
2 15 oz. cans Van Camps baked beans  (no substitutes)
1 med. onion chopped
1/2 C. brown sugar
1/2 C. dark Karo syrup
        (1/2 C. molasses can be substituted for brown sugar and Karo syrup)
1 - 1.5 C. BBQ sauce of choice  (I find the cheap, basic Heinz to be the best)


Brown ground beef.  Place in crock pot with remaining ingredients.  Set crock pot to med. and cook for 4-6 hours or until no longer "soupy".
