Buffalo Bites

 Here is an easy, healthier alternative to the traditional chicken wings that often get served at Super Bowl parties all over the country.  While my family prefers the traditional wings I love this one as a really great alternative.  Give it a try and see what you think!


Buffalo Bites

2 pounds ground chicken or turkey
½ cup wing sauce*, plus extra for serving
2 eggs, slightly scrambled
1 cup celery, finely diced
1 ¾ cups breadcrumbs
2 teaspoons kosher salt
2 teaspoons parsley
1 teaspoon garlic powder
blue cheese dressing
celery and carrot sticks
Pre-heat oven to 425 degrees. Grease mini-muffin tin with olive oil.
In large bowl, mix meat, wing sauce, and the rest of the ingredients through garlic powder with your hands until well mixed.
Spoon out meat mixture, about 2 tablespoons per ball, and then roll into ball. Place meatballs in mini-muffin tin. The mini-muffin tin keeps the meatballs shape and helps with browning.
Bake for 15 minutes, or until golden brown. Makes approx. 48 meatballs.
Serve warm with blue cheese dressing, extra wing sauce, and celery and carrot sticks.
